Ingredients for 4 people:
- 5 zucchini
- 20 raw shrimp or prawns without shell
- 125 gr of cherry tomatoes or dried tomato
- Olive oil Fresh basil
- Sweet or spicy paprika powder
- Juice of ½ lemon
- Salt and pepper
Bring water to a boil in a saucepan to cook the zucchini. Meanwhile, wash the zucchini and tomatoes well, peel the zucchini and with a peeler cut the zucchini in the shape of spaghetti, and cut the tomatoes into small pieces. Be careful with your fingers!!!!
When the water is boiling, put the zucchini in the pot, lower the heat a little, let it cook for about 10 minutes. Leave the prawns in a bowl with a tablespoon of extra virgin olive oil, a pinch of salt, a little bit of paprika and the juice of half a lemon, for about 10 minutes.
Drain the zucchini very well so that they release water. Pour a tablespoon of virgin olive oil in a frying pan, when the oil is hot, add the prawns, once they are done, remove them and store them in a bowl.
Then add the tomatoes, about 5 minutes, remove them, and store them with the shrimp. Put the courgettes drained in the pan and sauté them, you can add salt and pepper to your liking, when they are a little browned you can add the prawns, tomatoes and fresh basil in the pan.
Remove all the ingredients. Once they have been mixed correctly serve it in a source. Zucchini and prawn spaghetti are a very healthy and easy recipe to cook. It is perfect for a dinner since the zucchini contains a high amount of water and its caloric content is low.
