
This is another yummy, quick and healthy light dinner recipe.
Eggplant is a great source of dietary fiber, vitamin B1 & B6 and copper and also contains manganese, potassium, folate and vitamin K.
Ingredients for 1 person:
- 2 thin eggplants
- Extra virgin olive oil
- ½ lime
- Sea salt
- Hummus
- 1/2 Pomegranate
How to prepare?
Peel your granite apple (tip you can use a bowl of water to avoid making a mess all over your kitchen 🙂 Once done, simply drain of the water and keep the kernels in a nice bowl so we can use them later as topping on our roasted eggplant
Cut the egg plants in half. Then sprinkle it with a little bit of extra-virgin olive oil and roast it in the oven or airfryer @180-200 degrees celcius for about 15-30 minutes until the interior is tender.
Sprinkle a little bit of lemon juice, salt on top of the roasted eggplant with a very generous spread of hummus. (For a recipe about homemade hummus click here!)
Now top the hummus with pomegranate kernels as desired to finish off your delicious light weight dinner 🙂
