
Ingredients:
- 300gr of red lentils
- 2 onions finely chopped
- 2 garlic cloves, very minced
- 2cm of fresh ginger, very minced
- 400gr of tomatoes, peeled and cut into pieces
- 50cl of vegetable broth
- 50cl of vegetable broth
- 200gr of fresh spinach washed
- 1 teaspoon of extra virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon coriander powder
- 2 teaspoon turmeric powder
- 1 yellow lemon juice
Preparation:
- Wash and drain the lentils.
- Sauté the chopped onions in a saucepan in a little extra virgin olive oil. Add the garlic, ginger and all the spices. Let it simmer for a few minutes.
- Add the lentils, tomatoes, coconut milk, and vegetable broth, mix well and cook over medium heat for about 20 minutes, stirring occasionally.
- At the end of cooking, add the lemon juice and spinach, stir very well, slowly. And turn off the heat, let it rest for a few minutes before serving.
