Grilled mixed vegetables

I love grilling mixed vegetables, it’s quick, looks great and is simply delicious. 

Surely you know that most of us should include more vegetables in our meal, as it benefits us in many ways from reducing the risk of heart disease, obesity and some types of cancer. 

In another great thing of grilling vegetables is that you don’t have to worry about potentially cancer-causing compounds: polycyclic aromatic hydrocarbons (PAHs) and heterocyclic amines (HCAs) to form on grilled vegetables (and fruit), unlike with meat and fish.

Ingredientes for 2/3 persons:

  • 2 Bell peppers 
  • 1 Zucchini 
  • 1 Eggplant 
  • 12-15 spears asparagus (Asparagus besides having a healthy dose of vitamins A & C, asparagus also contain a fair amount of folate, another vitamin that your body needs for restful sleep
  • 12 Mushrooms (they contain tryptophan, which is a building block of serotonin, as well as melatonin which helps the body regulate it’s sleep cycle.
  • Optional: Half a sliced onion. For better sleep you might want to avoid onions before going to bed, at least 3 hours before going to bed. Some people who suffer from heartburn want to avoid eating onion before going to bed, especially when they are eaten raw. 
  • Season with Sea salt and olive oil

How to prepare:

It’s fairly simple. Make sure to rinse off your vegetables well with water and dry them off with a paper towel. We don’t want them to be wet when grilling/roasting. 

Next chop the vegetables in even slices, toss all vegetables in a bowl and drizzle them with olive oil, and season with a bit of sea salt and any other herbs you desire.

Make sure all vegetables are coated well with olive oil and your seasoning and evenly spread the vegetables on your oven plate and or air fryer pan.

Set your air fryer and oven at 180 degrees and or oven to 200 degrees celsius and turn the vegetables around after a couple of minutes in the oven and in about 15-20 minutes depending whether you use an air fryer or oven. 

Tip: I like to add some hummus or tahini on top of my grilled vegetables to finish it off.
