
Ingredients:
For the burger
- 2 red bell peppers
- 2 sprigs (or paste) of citronella (lemongrass)
- Pinch of salt
- Half a spoon of cumin
- 6 sprigs chives
- 2 fresh or dried kaffir lime leaves
- 2 garlic peeled
- A 3 cm piece of ginger, peeled and cut
- 4 skinless salmon fillets
- 1 glass filled with fresh coriander
- 2 tablespoons of extra virgin olive oil
- Half a teaspoon of black pepper
For the salad:
- 1 bowl of mixed lettuce leaves
- A dozen cherry tomatoes or 2 whole tomatoes
- Half a red onion, peeled and sliced
- Juice of half a lemon
- 2 tablespoons of extra virgin olive oil
- Half a teaspoon of black pepper
- a pinch of salt
How to prepare:
- Blend the peppers, citronella, salt, pepper, chives, kaffir lime leaves, garlic and ginger. Add the salmon and coriander and blend again until the salmon is finely chopped.
- From the mixture obtained form four balls, then shape them into a hamburger by squashing each ball.
- Heat the pan with two tablespoons of extra virgin olive oil or coconut oil, when it is hot, add the burgers, cook for 3 minutes on each side, check that the salmon is well done in the center before removing from the heat.
- Prepare a salad with the tomatoes, the lettuce leaves and the red onion, garnish with the lemon juice, the extra virgin olive oil, the salt and the pepper.
