Baked vegetables

Ingredients for 4 servings:

Grilled vegetables on a plate with sauce, top view.
  • 4 cloves of garlic with the skin
  • 1 red onion without skin and cut in 4
  • 1 green pepper
  • 1 red pepper
  • 12 asparagus
  • 1 zucchini
  • 1 eggplant
  • Salt
  • Pepper
  • Turmeric

Preparation:

Preheat the oven to 180ºC

Wash and cut the peppers, zucchini and aubergine. Wash the asparagus and peel it a little. Place all the ingredients in a dish prepared for the oven. Add the garlic with the skin (then the skin is removed before eating, they are very tasty).

Season to taste, add two teaspoons of turmeric and 4 tablespoons of extra virgin olive oil.

Mix all the ingredients very well (you can use your hands :))

Bake for 45 minutes.
